Paneer Bhurji
Paneer Bhurji (पनीर भुर्जी) is a delicious and quick North Indian recipe made with crumbled paneer. To make this recipe paneer is sautéed with onion, tomato and spices. It is simple and tasty dish that cannot be ignored. If you are bored with paneer gravy dishes, cook this dish. It is loved by all groups either elder or kids.

Paneer bhurji is a quick recipe. It does not take much time to prepare. It can be prepared within 15 minutes. For paneer bhurji, paneer should be moist and soft. So use homemade paneer to make this dish as it’s fresh, smooth and soft. It can be served with roti, paratha or naan during breakfast, lunch or dinner. It can be served as a side dish. It goes well with any Indian bread even you can eat this pav or kulcha. It can be stuffed within paratha, sandwich, rolls or Frankie.

Ingredients:

250 gm. Paneer
3 tbsp. oil
½ tsp. cumin
1 tsp. ginger garlic paste
1 onion, chopped
2 tomatoes, chopped
1 capsicum, chopped
1 green chilli
½ tsp. turmeric powder
1 tsp. coriander powder
1 tsp. Kashmiri red chilli powder
½ cup curd
Salt to taste
½ tsp. kasuri methi
¼ tsp. garam masala
Chopped coriander for garnishing 

Instructions:

Crumble the paneer finely and keep aside.


In a pan, heat oil on medium to high flame. Add cumin seeds in oil.
When they splutter, add ginger garlic paste. Saute till raw aroma goes away.
Add onion and cook till it become light brown.


Add chopped tomatoes and cook until become mushy. Add some salt to cook faster.


Add turmeric powder, red chilli powder and coriander powder. Mix properly all spices.


Now add chopped capsicum and curd. Mix properly. 


Add crumbled paneer, salt, garam masala and crushed kasuri methi. Stir and cook for some second.


Do not cook paneer for a long time, as they turn hard and lose their softness.
Add chopped coriander leaves and mix gently.


Serve with roti and paratha.


Tips:

  • You can add carrots and beans to make it healthier.
  • Try to make my paneer bhurji using fresh homemade paneer.
  • Do not over-cook the paneer, it will become hard and chewy.
